A delicious type of blue cheese produced in Italy from whole cow's milk, renowned throughout the world for the intense flavor and strong. Originally from the province of Milan (specifically the village's Gorgonzola), this type of cheese is traditionally produced also in Como, Pavia and Novara, in the last century, it has become the main producer. It is a raw cheese white straw, whose green speckles are due to the process of marbling, ie the formation of mold and, furthermore, the gorgonzola can be either soft (creamy soft paste with particular taste and characteristic slightly spicy) or type (spicy with a stronger flavor and strong and hard texture, more consistent and crumbly). Delicious and tasty, the gorgonzola has to be combined with different types of wine that vary according to the two types, and of course depending on personal taste: a glass of fine red wine and aged it would match with spicy gorgonzola, while the gorgonzola dolce is to be enjoyed with a glass of red or white wine that stands out for its softness and flavor.
