E' proprio nel centro storico che i visitatori possono ravvisare una città ricca di storia: le cinta muriare ne sono appunto una testimonianza. Una cinta muraria circondava la città già nel XII secolo, che venne però più volte abbattuta per poi essere ricostruita. Tuttora conservate sono le Mura esagonali commissionate da Francesco I de' Medici nella seconda metà del Cinquecento, i cui lavori videro l'impiego di condannati prelevati dalle prigioni in seguito ad un apposito decreto. In questo periodo vennero commissionate anche opere per l'approvvigionamento idrico dell'acqua che consistevano in cisterne sotterranee per la raccolta dell'acqua piovana, da sempre assai scarsa nella zona.
