Typical Ligurian sauce of green pesto is a delicious condiment saporire used for various types of pasta. Composed by the Genoese basil, which is the main ingredient, the pesto is prepared by pounding raw pine nuts and garlic, all seasoned with Parmesan or pecorino cheese (depending on local traditions) and extra virgin olive oil. Made using wooden pestle and mortar of marble, step on today may also be manufactured using the blender, even if the recipe is well sealed with mortar to tradition. A delicious creamy sauce really consistent and able to make flavorful dishes.
