Similar to ravioli, the pansotti (or pansoti) are a type of pasta typical of the culinary tradition of Genoa. Generally served with walnut sauce, thus constituting a truly unique and delicious dish, pansotti essentially differ from ravioli to the lack of meat in the filling and owe their name aspect that is precisely paunchy. In most traditional recipes vegetables used for the filling are made from a mixture of herbs that grow naturally in the Ligurian coast, now hard to find in stores, so-called preboggion. Among other herbal ingredients is also recalls a particular type of cheese curd or Liguria, the prescinseua, Parmesan cheese, marjoram and eggs.
