Type of pasta cooking tradition of amateur, curly gnocchi dumplings are oval and yellow that are prepared by mixing flour, eggs and hot water. It is no coincidence that curly gnocchi are involved in a yearly festival that takes place on the feast Amatrice Primaverissima held precisely in the spring, a party that stands for the preparation of the dumplings are made strictly curly prepared manually.
