Typical of the town of Spilinga, but produced in different parts of Vibo Valentia and available in various places of Calabria, the 'Nduja is a particularly spicy spreadable salami and delicious flavor, whose name derives from the French Andouille or other sausage made of intestines and poorer parts, while not actually dealing with a sausage_ Prepared with the fat of the pig, with the addition of chili peppers Calabrian, is kept in the blind alley (eyed), only to be smoked and, in particular, is consumed spalmandola on slices of toasted bread or as a hot sauté for base a sauce or a tomato sauce with garlic on the pizza, before other seasonings if raw or freshly baked, cheese on slices of semi-mature or in omelets_ Reddish in color, due to the presence of hot pepper, the 'Nduja, besides presenting a tasty and delicious taste, is a healthy product so as to bring beneficial effects to the cardiovascular system_ A delicacy to be savored and enjoyed in various recipes to delight the palates of connoisseurs the most refined and demanding_
