If the term souvlaki can be used to indicate any of its many possible variations and can therefore sometimes be confusing and inconsistent, there is no doubt that it is a delicacy in every case of typical traditional Greek cuisine that will delight the palates more refined. Composed primarily of meat and sometimes vegetables grilled on a kebab, souvlaki may also be served on a plate or as a sandwich in a pita, a tasty flat bread leavened, round, made from wheat flour. The word souvlaki is a diminutive of the Greek word souvla, which precisely means skewer. Sometimes, in some regions of Greece, it makes use of the term shish kebab (chicken kebab) to define the souvlaki skewers with the vegetables, while in other parts, as happens in Athens, the term indicates a souvlaki gyros sandwich, a typical greek food not unlike the kebabs, which differs in the use of pork as a basic ingredient. In the capital, therefore, to differentiate the souvlaki real from the other variants is used at the end kalamaki: constituted by a series of pieces of meat cut into cubes of 2, 3 centimeters and grilled on a wooden skewer after being marinated for a overnight in a mixture of lemon juice, olive oil and Greek spices, is a real delicacy able to conquer anyone who loves the taste more delicious. Among other variants, the pita souvlaki is a dish which consists of a souvlaki which they are added tomatoes, onions and tzatziki sauce and then be rolled in a pita slightly grilled. Still, the souvlaki merida is the ingredients of a Pita-souvlaki served on a plate instead of coils to be taken away. With a choice of delicious meat lamb, pork, chicken and sometimes swordfish, souvlaki is a dish that can satisfy even the most discerning palates.
